Centuries ago, North America's native people discovered how to make maple syrup from the sap of maple trees. Several years ago Mike learned how to make maple syrup from the sap of the Savage River Lodge maple trees from the Amish.
The art of making maple syrup has evolved over time, but Mike still does much of it the "old fashioned way" collecting sap with metal taps and buckets hanging on the trees. He also has gone more "hi-tech" with plastic tubing and a commercial evaporator to turn the sap into syrup, taking advantage of collecting more sap as quickly as possible in the short season.
Maple season occurs during March and early April. The sap flow is unpredictable and sporadic, based on the weather.
Mike invites you to join him at "Mike's Maple Camp" this maple season. You can help him tap trees, collect sap, or observe how he turns the thin sap into delicious pure maple syrup. He will send you home with a jar of maple syrup that you helped make. This is all dependent upon the sap running, so if the conditions aren't just right you may just have to envision the process and just enjoy the end result with your breakfast.
